Behind the Still
From Australian Grains to Your Glass

Every bottle of Sunchaser starts a long way from the bar. It starts with Australian grain, a lot of patience and a small batch copper pot still.
Starting with the grain
Vodka is often described as neutral. We don’t think it has to be. The grain you start with shapes the texture of the finished spirit, so we start with Australian wheat and let its soft, rounded character carry through.
Why copper pot stills
Copper pot stills are slower and less efficient than the industrial column stills used for most vodka. That’s the point. Distilling in small batches lets us make careful cuts, keeping the heart of each run and setting aside the rest.
Same spirit, different stories
Pure and Dirty share the same base spirit. Pure is bottled to show it off — clean, crisp and endlessly versatile. Dirty takes it somewhere savoury, built for the martini.
